Observed time/temperature control for safety (TCS) food cold holding above 41F.See temperature log. CA: Informed PIC that TCS food must be held at 41F or lower for cold holding. COS: Food cold holding for more than 4 hours was voluntarily discarded by person in charge
2-2D - adequate handwashing facilities supplied & accessible
Regulation: 511-6-1.07(3)(a) - handwashing cleanser, availability (pf)
Observed that the hand sink at the main kitchen and the bar have no hand soap. CA: Handwashing Cleanser, Availability. Each handwashing sink or group of two adjacent handwashing sinks shall be provided with a supply of hand cleaning liquid, powder, or bar soap. COS: Hand soap(liquid) was made available for both hand sink.

No paper towel was observed at the hand sink sinks for the main kitchen, the bar and female bathroom hand sink. CA: Each handwashing sink or group of adjacent handwashing sinks shall be provided with: Individual, disposable towels. COS: paper towel was provided to all the hand sinks.

Observed pack of water bottled stored on the floor at the bar area. food shall be protected from contamination by storing the food: In a clean, dry location; where it is not exposed to splash, dust, or other contamination; and at least 6 inches (15 cm) above the floor. COS: Pack of water was removed.

Gasket on the drink cooler door at the bar is torn. PIC advised to replace or repair torn gaskets.

Regulation: 511-6-1.07(5)(n) - maintaining premises, free of unnecessary items/litter (c)
Observed the facility to be packed with items not in use and not maintain properly (such as dish machine). CA: The premises shall be free of items that are unnecessary to the operation or maintenance of the establishment, such as litter or equipment that is nonfunctional or no longer used and litter.
