4-2B - food-contact surfaces: cleaned & sanitized
Regulation: 511-6-1.05(7)(a)1 - equipment, food-contact surfaces,& utensils (pf)
Observed about five pans stored in prep sink (meat sink).
CA: Equipment food-contact surfaces and utensils shall be clean to sight and touch.
COS: PIC voluntarily removed the pans, sanitized the sink and placed the pans in three compartment sink to be properly washed, sanitized and air- dried.

Regulation: 511-6-1.05(2)(h) - nonfood-contact surfaces (c)
Observed aluminum foil used to line the bottom shelf of the prep table. The aluminum foil covered shelf is also very rusty. CA: Nonfood-contact surfaces shall be free of unnecessary ledges, projections, and crevices, and designed and constructed to allow easy cleaning and to facilitate maintenance. Discussed with PIC to remove the aluminum foil and use the NSF approved shelf liners.
17C - physical facilities installed, maintained, and clean
Regulation: 511-6-1.07(5)(a),(b) - good repair, physical facilities maintained; cleaning, frequency & restrictions, cleaned often enough to keep them clean (c)
Observed dark grime and debris on the kitchen floor (Mostly in the corners and harder to reach areas). CA: The physical facilities shall be cleaned as often as necessary to keep them clean and by methods that prevent contamination of food products.
