4-2B - food-contact surfaces: cleaned & sanitized
Regulation: 511-6-1.05(6)(n) - manual and mechanical warewashing equipment, chemical sanitization-temperature, ph, concentration, hardness (p,pf)
Observed warewashing machine not dispensing sanitizer solution. Machine had warning message displayed despite PIC's recent replacement & fill of sanitizer.
CA: A chlorine sanitizer used for mechanical operation shall have a concentration between 50-99ppm
COS: PIC placed all dishes recently washed into quat sanitizer (400ppm) in 3-compartment sink, put a "do not use" sign on washer and informed all employees to not use dishwasher until repaired.
12B - personal cleanliness
Regulation: 511-6-1.03(5)(f) - fingernails (pf)
Observed an employee with painted nails past the finger tips handling food.
CA: Employees shall keep their fingernails clean and trimmed to no longer than the tips of the fingers. Unless wearing gloves in good repair, a food employee may not wear fingernail polish or artificial fingernails when working with exposed food.
COS: Employee put on gloves.
12B - personal cleanliness
Regulation: 511-6-1.03(5)(j) - hair restraints (c)
Observed employee serving fries with long hair un-restrained (in long loose ponytail).
CA: Employees preparing or handling food shall use effective and clean, disposable or easily cleanable nets or other hair restraints approved by the Health Authority, worn properly to restrain loose hair including beards and mustaches longer than one half inch.
- This does not apply to employees such as counter staff who only serve beverages and wrapped or packaged foods, hostesses, and wait staff if they present a minimal risk of contaminating exposed food
COS: Employee restrained hair
