Observed multiple TCS foods in pizza prep area holding above 41F (see temperature log for asterisked foods) - PIC stated foods had been in cooler since Sunday
CA: Except during preparation, cooking, or cooling, or when time is used as the public health control, time/temperature control for safety food shall be maintained at 41°F (5°C) or below or 135°F (57°C) or above
Corrected on Site: PIC voluntarily discarded all TCS foods that had been prepped before today from cooler. PIC also lowered cooler ambient temperature
