CA: For a stationary rack, single temperature machine, 165ºF. COS: PIC called maintenance to come fix the warewashing machine during the time of the inspection. Warewashing machine was fixed, and tested with temperature sticker; the sticker turned the correct color.

The Time for using time as a public health control that was indicated on the eggs were not the correct time at the time of inspection. at 8:58am I observed eggs on Time indicated for 9-1. The eggs were at 50F at this time. Discussed with PIC that when using time as a public health control the correct time must be indicated and the food must be at temperature when the TCS food is put on time. PIC stated that she just put the eggs out. COS- PIC put eggs in cooler to cool more rapidly and put out eggs that was at 41F and indicated the correct time.
