Walls around prep sinks in kitchen has accumulation of mold, needs re caulking. Large accumulation of dust on ceiling above self serve salsa cooler.
Keep areas in good repair to be easily cleanable and free of dust to avoid physical contamination.

-Large Lexan container of refried beans cooling from yesterday with temperatures of 59F-63F in walk in cooler. -Medium size container of chicken salad cooling from yesterday with temperatures of 48F-46F in prep top cooler. . Time and temperature control for safety foods to be cooled and stored must cool from 135F to 70 in 2 hours and from 135F to 41 with a total of 6 hours. COS: All items voluntarily discarded by manager. Discussed how to cool using ice bath and shallow pans to cool rapidly from 135F to 70 and then loosely cover and continue to cool to 41F within an total of 6 hours from 135F - 41F.

Medicines that are in a food service establishment for the employee's use shall be labeled with a legible manufacturer's label and located to prevent the contamination of food, equipment, utensils, lines and single-use articles, and located so they are inaccessible to children. COS: Food employee removed medicine.
