Food contact surfaces shall be made of materials that do not allow the migration of deleterious substances, shall be safe, durable and non-absorbent. COS: Person in charge discarded grocery bag, will hold peppers using a pan in flat top grill.

1 large container of house made potatoe salad in homestyle refrigerator at 54F . Potentially hazardous food shall be maintained at 41 degrees Fahrenheit or lower.COS: PIC discarded potatoe salad and lower the refrigerator thermostat to a colder setting ( ambient was 50F).

Hand sink is not equipped to provide tempered water at a temperature of at least 85F through a mixing valve or combination faucet. Water tank didn't have enough water in to supply demand. COS: Person in charge went to base of operation ( 2 miles) to fill up tank and water temp recorded at 90F.
