Regulation: 511-6-1.04(6)(g) - ready-to-eat time/temperature control for safety food, date marking (pf)
Observed multiple prepped food items in walk-in cooler and reach-in coolers without date labels. Food items stored past 24 hours should bear a date label. PIC added date labels during inspection.
14B - utensils, equipment and linens: properly stored, dried, handled
Regulation: 511-6-1.05(10)(a) - equipment & utensils, air-drying required (c)
Observed metal containers wet stacked on drying rack. Equipment and utensils should be properly air dried after cleaning and sanitizing. Containers unstacked during inspection.
15C - nonfood-contact surfaces clean
Regulation: 511-6-1.05(7)(d) - nonfood-contact surfaces (c)
Observed heavy build-up of grease behind fryers. Heavy build-up of food debris in reach in coolers and reach-in freezers. Non-contact surfaces should be cleaned frequently to prevent accumulation.
17D - adequate ventilation and lighting; designated areas used
Regulation: 511-6-1.07(5)(j) - using dressing rooms & lockers, used for changing clothes and storing employee belongings (c)
Observed employee purse stored with single use items, employee phone on prep table and employee drink in single use cup with lid and straw stored on prep table. Employee items should be stored in designated area. All employee items moved during inspection.
