Observed box of ranch dressing and blue cheese dressing stored on countertop that states keep refrigerated above proper cold holding temperate of 41F. Food items move to reach-in cooler to cool.
12C - wiping cloths: properly used and stored
Regulation: 511-6-1.04(4)(m) - wiping cloths, use limitation (c)
Observed wiping clothes stored throughout kitchen. Wiping clothes used for wiping counters and equipment should be held in between uses in a chemical sanitizing solution. PIC moved wiping clothes to sanitizer bucket.
