Observed black build-up in large ice machine in kitchen area. CA: Equipment food-contact surfaces and utensils shall be cleaned such as ice bins. PIC will drain, clean, and sanitize ice bin in kitchen area.
12B - personal cleanliness
Regulation: 511-6-1.03(5)(j) - hair restraints (c)
Observed an employee handling food without proper hair restraint. CA: Employees preparing or handling food shall use effective and clean, disposable or easily, cleanable nets or other hair restraints approved by the Health Authority, worn properly to restrain loose hair including beards and mustaches longer than one half inch. PIC will purchase hair restraints for the employee.

Regulation: 511-6-1.06(1)(g),(h) - water supply, capacity; pressure (pf)
Observed lack of water pressure at the employee handwashing sink in the kitchen area. CA: Water under pressure shall be provided to all fixtures, equipment, and nonfood equipment that are required to use water except that water supplied as specified under subsection (1)(k)1 and 2 to a temporary food service operation or in response to a temporary interruption of a water supply need not be under pressure. PIC stated that he is in the process of repairing the employee handwashing sink in the kitchen area due to a leak under the pipe.

Regulation: 511-6-1.05(2)(a) - equipment and utensils, constructed of durable materials (c)
Observed household mini oven in the kitchen area on the prep table in front of the fryers and grill. CA: Equipment and utensils shall be designed and constructed to be durable and to retain their characteristic qualities under normal use conditions. PIC will remove household mini oven in the kitchen area on the prep table in front of the fryers and grill.
