Observed employee begin work without washing hands. Employee had been outside the facility and then began work. Hand wash sink is unsupplied: no soap or paper towels. CA: Wash hands when beginning food prep work.
6-1A - proper cold holding temperatures
Regulation: 511-6-1.04(6)(f) - time/temperature control for safety; cold holding (p)
Reach in cooler found with door ajar. Foods found with condensation on containers. Manager alleges cooler temps. are due to frequent cooler use. CA: Facility should acquire more reach in coolers or use other means to assure foods are properly cooled.
