Observed microwave ceiling to be soiled with heavy food splatter. Food contact surfaces must be cleaned and sanitized at a rate to prevent build up or every 4 hours (whichever comes first).
6-2 - proper date marking and disposition
Regulation: 511-6-1.04(6)(g) - ready-to-eat time/temperature control for safety food, date marking (pf)
Observed no dating procedures. Need to date all foods once removed from original packaging and discard within 7 days.
15C - nonfood-contact surfaces clean
Regulation: 511-6-1.05(7)(a)2,3 - equipment, food/nonfood-contact surfaces, and utensils, food-contact surfaces of cooking equipment & nonfood-contact surfaces free of accumulations (c)
Observed soiled cooler bottom in reach in cooler with old food debris and spilt liquids. Observed food residue on back side of reach in cooler. Advised deep cleaning.
