12C - wiping cloths: properly used and stored
Regulation: 511-6-1.04(4)(m) - wiping cloths, use limitation (c)
Observed sanitizer buckets testing at 100 ppm QAC throughout main kitchen and front food service. C/A: 2. Cloths in-use for wiping counters and other equipment surfaces shall be:
(i) Held between uses in a chemical sanitizer solution at a concentration specified under DPH Rule 511-6-1-.05(6)(n); and
(ii) Laundered daily. COS: Sanitizing buckets remade to 200 ppm QAC.
15A - food and nonfood-contact surfaces cleanable, properly designed, constructed, and used

Observed loose door seal in under counter reach in cooler of main kitchen. C/A: Equipment components such as doors, seals, hinges, fasteners, and kick plates shall be kept intact, tight, and adjusted in accordance with manufacturer's specifications.
