Regulation: 511-6-1.03(2)(o) - person-in-charge duties (pf)
PIC unable to provide a verifiable manner in which food employees have been informed of their responsibility to report as it relates to foodborne illness.
C/A: Food employees and conditional employees are informed in a verifiable manner of their responsibility to report in accordance with the Chapter, to the person in charge, information about their health and activities as they relate to diseases that are transmissible through food
NOTE: If electronic records of employee health policy are unable to verified by health authority (PIC unable to access them) then physical records must be maintained. PIC called the GM, said they would email copies to EHS.
2-2B - proper eating, tasting, drinking, or tobacco use
Regulation: 511-6-1.03(5)(k)1&2 - eating, drinking, or using tobacco (c)
Observed an open energy drink can in main kitchen and food employee drink from open can.
C/A: Employees shall consume food only in approved designated areas separate from food preparation and serving areas, equipment or utensil areas and food storage areas. However, drinking from a single service beverage cup with a secure lid and straw that is handled to prevent contamination of the employee’s hands, the container, exposed food, clean equipment, utensils and linens, unwrapped single-service and single-use articles will be allowed.
COS: food employee took open can back to car. EHS discussed drinking beverages out of a disposable cup with a straw and a lid.
2-2D - adequate handwashing facilities supplied & accessible
Regulation: 511-6-1.06(2)(o) - using a handwashing sink- operation & maintenance (pf)
Observed a pizza storage rack blocking the hand sink in the pizza prep area (located near the ovens).
C/A: A handwashing sink shall be maintained so that it is accessible at all times for employee use.
COS: cart moved
16B - plumbing installed; proper backflow devices
Regulation: 511-6-1.06(2)(d) - backflow prevention, air gap (p)
Observed a bag connecting the air gap of the three compartment sink with the drain.
C/A: An air gap between the water supply inlet and the flood level rim of the plumbing fixture, equipment or nonfood equipment shall be at least twice the diameter of the water supply inlet and may not be less than 1 inch (25 mm). P
COS: bag removed
15A - food and nonfood-contact surfaces cleanable, properly designed, constructed, and used
Regulation: 511-6-1.05(6)(a) - good repair & proper adjustment (c)
Observed the 2-door reach-in freezer with a door seal in disrepair.
C/A: Equipment shall be maintained in a state of repair and condition that meets the requirements specified under subsections (1) and (2)of this Rule.
- Equipment components such as doors, seals, hinges, fasteners, and kick plates shall be kept intact, tight, and adjusted in accordance with manufacturer's specifications.
NOTE: EHS did observe all food frozen in this unit
15B - warewashing facilities: installed, maintained, used; test strips
Regulation: 511-6-1.05(3)(h),(i),(j) - temperature measuring device, manual warewashing; sanitizing solutions, testing device (pf)
Facility uses QUAT sanitizer; facility does not have any test strips.
C/A: A test kit or other device that accurately measures the concentration in mg/L of sanitizing solutions shall be provided.
NOTE: PIC did state that they have already ordered more test strips and they should arrive on the next truck order (Friday)
