6-1A - proper cold holding temperatures
Regulation: 511-6-1.04(6)(f) - time/temperature control for safety; cold holding (p)
Observed several TCS foods (see asterisks) cold holding at above 41F in prep top cooler along front food service area.
C/A: During cold holding, all TCS foods must be maintained at 41F and below.
COS: Per PIC, food out of temperature less than 2-hours, food moved to RIF in main kitchen to rapidly cool and food on make line replenished with food measuring 41F and below.
4-2A - food stored covered
Regulation: 511-6-1.04(4)(c)1(iv) - packaged & unpackaged food, food stored covered(c)
Observed all dry powder mixes (along prep top cooler and counter) and ice in ice bin stored uncovered, exposed to contamination along front food service area.
C/A: Unless cooling, all food must be stored covered.
COS: All food covered.
15A - food and nonfood-contact surfaces cleanable, properly designed, constructed, and used
Regulation: 511-6-1.05(6)(q)1&3 - good repair & calibration (c)
Observed in-use prep top cooler along front food service area cold holding at above 50F.
C/A: Repair unit; Ambient air temperature, water pressure, and water temperature measuring devices shall be maintained in good repair and be accurate within the intended range of use.
*All TCS foods moved to other units within sufficient range; PIC must repair unit to adequately cold hold at 41F and below prior to resuming use. PIC has notified management regarding repairs to unit.
COS-2/10/2025: Operator emailed photo confirmation of internal unit temperature following repairs; internal unit temperature 37F. The unit is allowed to be used.
