Observed hand sink with no hot water next to mop sink in main kitchen area.
CA: A handwashing sink shall be equipped to provide tempered water at a temperature of at least 100ºF (38ºC) through a mixing valve or combination faucet.
COS: PIC will be contacting maintenance.

Observed, in main kitchen prep top cooler #3 bottom, raw shelled eggs and raw bacon pieces stored above ready to eat pot roast, rice, and biscuits. Observed in walk in cooler, raw chicken breast stored above raw bacon and raw ground beef. CA: When using shelves, TCS foods shall be stored according to their internal cook temperature. Example: (top) RTE, fish/seafood/raw shell eggs (145°F), lamb/goat/ground beef/pork (155°F), poultry (165°F). COS: Employee moved raw eggs and bacon to bottom shelf and stored rice, pot roast, and biscuits above. Raw chicken stored horizontally on shelf with raw bacon and ground beef.
