Regulation: 511-6-1.04(6)(f) - time/temperature control for safety; cold holding (p)
Containers of lasagna and chicken strips stored inside the reach in cooler held cold holding temperatures above 41F. Containers of chicken wings stored inside the refrigerator and a container of pizza sauce stored on the prep line countertop held cold holding temperatures above 41F. CA: Except during preparation, cooking, or cooling, or when time is used as the public health control, time/temperature control for safety food shall be maintained at 41°F (5°C) or below. COS: The food items were discarded.
17C - physical facilities installed, maintained, and clean
Regulation: 511-6-1.07(5)(a),(b) - good repair, physical facilities maintained; cleaning, frequency & restrictions, cleaned often enough to keep them clean (c)
Mold was observed on the wall near the dishwasher. CA: All physical facilities shall be maintained in good repair.
