6-2 - proper date marking and disposition
Regulation: 511-6-1.04(6)(g) - ready-to-eat time/temperature control for safety food, date marking (pf)
Observed 20 syrup flavors in squirt bottles, flavored poppy balls and fruit in and under the prep top cooler, and 6 sweet cream squirt bottles in the reach in cooler of the front food service not labeled with a date and the product has manufacturers expiration. CA: Except as specified in paragraphs 5 through 7 of this subsection, refrigerated, ready-to-eat, time/temperature control for safety food prepared and packaged by a food processing plant shall be clearly marked, at the time the original container is opened in a food service establishment and if the food is held for more than 24 hours, to indicate the date or day by which the food shall be consumed on the premises, sold, or discarded, when held at a temperature of 41°F (5°C) or below for a maximum of 7 days after the original container is opened. The day the original container is opened in the food service establishment shall be counted as Day 1, except, the day or date marked by the food service establishment may not exceed a manufacturer’s use by date if the manufacturer determined the use-by date based on food safety; Pf COS: PIC labeled every item with the manufacturers expiration date.

12B - personal cleanliness
Regulation: 511-6-1.03(5)(f) - fingernails (pf)
Observed 2 employees preparing food and manipulating packages/containers with nails longer than the tips of the fingers. CA: Employees shall keep their fingernails clean and trimmed to no longer than the tips of the fingers. Unless wearing gloves in good repair, a food employee may not wear fingernail polish or artificial fingernails when working with exposed food. Pf Correct within 10 days.

Observed 2 handwashing signs at the vegetable prep sink. CA: A sign or poster that notifies food employees to wash their hands shall be provided at all handwashing sinks used by food employees and shall be clearly visible to food employees. COS: PIC removed the signs
