6-1B - proper hot holding temperatures
Regulation: 511-6-1.04(6)(f) - time/temperature control for safety; hot holding (p)
Observed TCS food (meatball marinara) not hot holding at the front food service steam well below 135F in the temperature danger zone. Advised PIC that when hot holding TCS foods, foods shall be range between 135F or above. COS: PIC reheated meatballs at the front food service microwave at least to 165F.
10D - food properly labeled; original container
Regulation: 511-6-1.04(4)(d) - food storage containers identified with common name of food (c)
Observed multiple seasoning shakers filled with ingredients and not labeled with its contents common name at the front-food service area. Advised PIC that when removed from its original container foods shall be labeled with its common make in English. Advised PIC to label all seasoning shakers with its common name.
17D - adequate ventilation and lighting; designated areas used
Regulation: 511-6-1.07(4)(b) - designated areas for employee activity, located to prevent contamination of food, equipment, utensils, linens, & single service articles (c)
Observed 2 coffee cup stored in the WIC. Also observed 1 water bottle stored next to the front food service hand wash sink. Advised PIC that all personal belongings shall be located in a designated area in order to prevent contamination. COS: PIC relocated coffee cup and water bottle to a designated area.
