Observed multiple packages of spring mix (arugula) cold holding above 41F for 3 hours. Advised PIC TCS food items cold holding above 41F. COS: PIC relocated TCS food items for cooling.
4-2A - food stored covered
Regulation: 511-6-1.04(4)(c)1(iv) - packaged & unpackaged food, food stored covered(c)
Observed multiple containers of seasoning and flour stored uncovered, not in use. Advised PIC food shall be stored, covered, protected. COS: PIC placed lids on food items.
15A - food and nonfood-contact surfaces cleanable, properly designed, constructed, and used
Regulation: 511-6-1.05(6)(q)1&3 - good repair & calibration (c)
Observed reach-in-cooler with ambient air temperature of 44F. Advised PIC ambient air temperature must be adequate within range.
17D - adequate ventilation and lighting; designated areas used
Regulation: 511-6-1.07(4)(b) - designated areas for employee activity, located to prevent contamination of food, equipment, utensils, linens, & single service articles (c)
Observed keys on top of prep-top unit, shelving. Advised PIC personal belongings shall be stored in designated area. COS: PIC relocated personal keys.
