Observed employee drinking from a disposable bottle without a straw in the front-food service cookline employees shall consume food only in approved designated areas separate from food prep, however drinking from a single-service beverage cup with a secure lid and straw that is handled to prevent contamination of the employees, exposed food, clean equipment, utensils and lines, unwrapped single-service & single-use articles will be allowed. COS: PIC had food employee discard beverage.
4-2B - food-contact surfaces: cleaned & sanitized

Observed interior of microwave (ceiling) food contact surface stored as clean with residue at the front food service area; observed bulk ice machine shoot - food contact surface stored as clean with staining in the main kitchen. Observed food-contact surface of ice bin lid in the (interior) in the main kitchen stored as clean with staining. Advised PIC that equipment food contact surfaces and utensils shall be cleaned at any time during the operation when contamination when contamination may have occurred. Advised PIC to increase to cleaning frequency of microwaves and ice machines.
11A - proper cooling methods used: adequate equipment for temperature control

Observed multiple containers of marinara sauce and cooked pasta cooling tightly covered in the WIC in the main kitchen. Advised PIC on proper cooling methods: under refrigeration uncovered and loosely covered. COS - PIC removed covers from marinara sauce and cooked pasta.

Observed 2025 food service permit posted in public view. Advised PIC that a current food service permit shall be posted in public view at all times. COS - PIC placed 2026 permit in public view.
