Observed food in self-serve food buffet area TCS food not below 41°F or below. CA: All TCS food shall be maintained at 41°F or below.

Observed employee in the hibachi area of the kitchen drinking from an open cup. Observed employee cup (open cup without lid) above prep-counter. CA: Employee shall consume food only in approved designated areas separate from food preparation and serving areas. Drinking from a single service beverage cup with a secure lid and straw. COS

Observed employee in front sushi area washing dishes in prep sink. CA: If a detergent-sanitizer is used to sanitizer in a cleaning and sanitizing procedure where there is no distinct water rinse between the washing and sanitizing step.

Observed soda nozzles in front food service area with build-up. CA: Equipment food contact surfaces and utensils shall be clean to sight and touch.

Observed insect control strips/device hanging over the fryer baskets, reach in cooler and the food prep area in the main kitchen. Insect control devices shall be installed so that the devices are not located over a food preparation area.

Observed the backdoor of the facility in the main kitchen wide open. Outer opening of a food service establishment shall be protected against the entry of insects and rodents by solid self-closing, tight-fitting doors.
