1-2A - pic present, demonstrates knowledge, performs duties
Regulation: 511-6-1.03(2)(a)-(n)(p),(q) - responsibility of pic (pf)
Observed facility without knowledge of food allergies. Advised PIC that Employees are properly trained in food safety, including food allergy awareness, as it relates to their assigned duties. Food allergy awareness includes describing foods identified as major food allergens and the symptoms that a major food allergen could cause in a sensitive individual who has an allergic reaction. Advised PIC to obtain a food allergy awareness training and provide evidence to the Health Authority.
11A - proper cooling methods used: adequate equipment for temperature control
Regulation: 511-6-1.04(6)(e) - cooling methods (pf, c)
Observed multiple containers of fried rice cooling tightly covered in the WIC in the main kitchen. Also observed a container of fried rice near the cookline of the main kitchen cooling at room temperature. Advised PIC on proper cooling methods: under refrigeration- loosely covered or uncovered. COS: Had food employee remove covers from fried rice in the WIC and placed the fried rice on the counter in RIC #2.
11C - approved thawing methods used
Regulation: 511-6-1.04(6)(c) - thawing (c)
Upon arrival, observed frozen cooked noodles thawing on the counter in the main kitchen at room temperature. Advised PIC on proper thawing methods- Under refrigeration that maintains the food temperature at 41°F (5°C) or less. COS: Had food employee place frozen cooked noodles in the WIC for proper thawing.
18 - insects, rodents, and animals not present
Regulation: 511-6-1.07(2)(m) - outer openings protected (c)
Observed visible light entry at the bottom of the screen door while the back door was open and the screen door was closed. Advised PIC that the outer openings of the facility shall be protected against the entry of insects and rodents by solid, self-closing, tight-fitting doors. Advised PIC to obtain weatherstrip for the back door and screen door.
15A - food and nonfood-contact surfaces cleanable, properly designed, constructed, and used
Regulation: 511-6-1.05(1)(i) - nonfood-contact surfaces (c)
Observed cardboard lining in RIC #3. Advised PIC Nonfood-contact surfaces of equipment that are exposed to splash, spillage, or other food soiling or that require frequent cleaning shall be constructed of a corrosion-resistant, nonabsorbent, and smooth material. COS: Had food employee remove cardboard lining from RIC #3.
15C - nonfood-contact surfaces clean
Regulation: 511-6-1.05(7)(a)2,3 - equipment, food/nonfood-contact surfaces, and utensils, food-contact surfaces of cooking equipment & nonfood-contact surfaces free of accumulations (c)
Observed multiple nonfood contact surfaces of the interior of RIC #2 in the main kitchen and the interior of RIF #1 in the main kitchen in need of cleaning due to residue and old food debris. Advised PIC that nonfood-contact surfaces of equipment shall be kept free of an accumulation of dust, dirt, food residue, and other debris. Advised PIC to thoroughly clean all nonfood contact surfaces
