Observed 2 reach in coolers near the front-service area with an ambient temperature of 52F and 50F and in disrepair without a work order. Advised PIC ambient air temperature, water pressure, and water temperature measuring devices shall be maintained in good repair and be accurate within the intended range of use. Advised PIC to have units repaired.

Observed ice machine door in disrepair. Advised PIC Equipment components such as doors, seals, hinges, fasteners, and kick plates shall be kept intact, tight, and adjusted in accordance with manufacturer's specifications. Advised PIC to replace door of ice machine.

Observed milk inside of milk cooler measuring at 44F. Advised PIC Hot and Cold Holding. Except during preparation, cooking, or cooling, or when time is used as the public health control, time/temperature control for safety food shall be maintained at 41°F (5°C) or below

Observed multiple containers of salad, cooling tightly covered in walk-in-cooler. Advised PIC Cooling shall be accomplished in accordance with the time and temperature criteria specified under DPH Rule 511-6-1-.04(6)(d) by using one or more of the following methods depending on the type of food being cooled: Loosely covered, or uncovered if protected from overhead contamination during the cooling period to facilitate heat transfer from the surface of the food. COS: Had PIC remove lids from tightly covered salads.

Observed ambient air temperature of 45F at milk box front food service. Observed refrigerator unit out of order, without work order. Advised PIC ambient air temperature, water pressure, and water temperature measuring devices shall be maintained in good repair and be accurate within the intended range of use.

Observed pink/ mold like residue on the surfaces of the panel inside the ice machine. Advised PIC all food contact surfaces shall be cleaned to sight and touch.
