Observed in the RIC (main kitchen) 4 crates of raw shell eggs stored above peppers. Also observed at the cooler drawer raw beef stored directly behind diced pineapples and cooked chicken. Advised PIC that raw and RTE foods shall be stored according to final cook temperature. COS: PIC relocated raw shell eggs and raw beef for proper storage.
2-2D - adequate handwashing facilities supplied & accessible
Regulation: 511-6-1.07(3)(b) - hand drying provision (pf)
Observed front and back handwash sink not supplied with paper towels. Advised PIC that paper towels shall be supplied at hand sinks at all times. COS: PIC supplied both hand sinks with paper towels.

Observed soap not supplied at the front and back handwash sink. Advised PIC that soap shall be supplied with soap handwash sinks at all times. COS: PIC supplied both handwash sinks with soap.

Observed multiple container soft alfredo sauce cooling tightly covered at the front-food serviced- RIC #2. Advised PIC on proper cooling methods. COS:PIC removed covers for proper cooling methods. PIC removed covers for proper cooling in RIC #3 (alfredo sauce).

Observed the most recent inspection report not posted in public view. Advised PIC that the most recent inspection report shall be posted in public view at all times. Advised PIC to obtain the most recent inspection report and post in public view.
17C - physical facilities installed, maintained, and clean
Regulation: 511-6-1.07(1)(a) - indoor materials (c)
Observed absorbent ceiling tiles at the bar area. Advised PIC that ceiling tiles near food prep areas, storage for food and ware washing facilities shall be durable, non-absorbent, and easily cleanable. Advised PIC to replace absorbent ceiling tiles with nonabsorbent ceiling tiles.
