Observed several TCS foods held above 41F. Advised PIC all TCS foods shall be held @ 41F or below. Advised to relocate or replace on an ice bath.
15A - food and nonfood-contact surfaces cleanable, properly designed, constructed, and used
Regulation: 511-6-1.05(6)(q)1&3 - good repair & calibration (c)
Observed prep top cooler and reach in cooler in disrepair. Advised PIC that all equipment shall be in good repair.
