Observed dairy held in reach in cooler measuring temperatures greater than 41 degrees or below. COS: PIC discarded CA: Food items cold holding shall remain 41 degrees or below at all times
15A - food and nonfood-contact surfaces cleanable, properly designed, constructed, and used
Regulation: 511-6-1.05(6)(a) - good repair & proper adjustment (c)
Observed reach-in cooler measuring ambient temperature of 49 degrees. COS: PIC turned down unit and temp fell. CA: Equipment shall be maintained in a state of repair and condition that meets the requirements specified
17D - adequate ventilation and lighting; designated areas used
Regulation: 511-6-1.07(4)(b) - designated areas for employee activity, located to prevent contamination of food, equipment, utensils, linens, & single service articles (c)
