6-1A - proper cold holding temperatures
Regulation: 511-6-1.04(6)(f) - time/temperature control for safety; cold holding (p)
Observed TCS foods (shell eggs, chicken & pork) cold holding on the counter and reach in cooler above 41F. Advised PIC all TCS foods shall cold hold at 41F or below. COS: Items were relocated to the walk-in cooler. cold holding
6-1B - proper hot holding temperatures
Regulation: 511-6-1.04(6)(f) - time/temperature control for safety; hot holding (p)
Observed TCS foods hot holding in the front area heat lamp (duck) below 135F. Advised PIC all TCS foods shall hot hold at 135F or higher. COS Ducks were reheated.
4-2B - food-contact surfaces: cleaned & sanitized
Regulation: 511-6-1.05(7)(b) - food contact surfaces and utensils - cleaning frequency (p, c)
Observed bulk ice machine interior panel with black substance on the surface. Advised PIC food contact surfaces shall be cleaned frequently to minimize accumulation.
