Regulation: 511-6-1.04(6)(f) - time/temperature control for safety; cold holding (p)
Observed TCS food items (cream cheese) held at grill prep ice bath measuring above 41 degrees F. COS: PIC encased cream cheese in steel metal pans with more ice and temps fell. Ice was only on bottom before CA. CA: All TCS food items shall be cold held at 41 degrees F or below.
