Observed TCS foods cold holding on the counter and prep top cooler above 41F. CA: All TCSW foods shall cold hold at 41F or below. COS: Foods were placed on an ice bath.
2-2E - response procedures for vomiting & diarrheal events
Regulation: 511-6-1.03(6) - clean-up of vomiting and diarrheal events(pf)
Observed facility without clean up procedures or supplies when responding to vomiting/diarrheal events. CA: Facility shall have supplies available at all times.
12C - wiping cloths: properly used and stored
Regulation: 511-6-1.04(4)(m) - wiping cloths, use limitation (c)
Observed wiping cloth sitting on prep area counters: Wiping cloth shall be stored in sanitizer solutions in between uses. COS Cloths placed in buckets.
18 - insects, rodents, and animals not present
Regulation: 511-6-1.07(5)(k) - controlling pests (pf, c)
Observed small flies at the bar and wait station. CA: Pests shall be controlled at all times. Discussed with PIC to contact pest control.
