6-1A - proper cold holding temperatures

Observed TCS foods (raw chicken) in the main kitchen prep area stored above 41F. Advised PIC TCS foods shall cold hold at 41F or below. Advised to add more ice and water to cooler.
4-2A - food stored covered
Regulation: 511-6-1.04(4)(c)1(iv) - packaged & unpackaged food, food stored covered(c)
Observed ice panel open in the front food service area of the fountain drink machine. Advised PIC foods shall be protected at all times. COS: Employee closed the ice panel.
4-2B - food-contact surfaces: cleaned & sanitized
Regulation: 511-6-1.05(7)(a)1 - equipment, food-contact surfaces,& utensils (pf)
Observed encrusted food debris on the surfaces of the strainer baskets and containers stored with clean containers. Advised PIC all food contact surfaces shall be cleaned to sight & touch.
