Observed TCS foods cold holding above 41F in the WIC. CA: All TCS foods shall cold hold at 41F or below. COS: Foods re-located to the walk in freezer.
6-1B - proper hot holding temperatures
Regulation: 511-6-1.04(6)(f) - time/temperature control for safety; hot holding (p)
Observed TCS foods hot holding below in the front food service heat lamp. CA: Alls TCS foods shall hot hold at 135F or higher. COS: Chicken was re-heated to 165F.

Observed facility operating w/o allergen awareness training for employees. CA: All food employees shall have allergen awareness training provided which shall include signs & symptoms for allergic reactions.
