Observed high temp dish machine not reaching at least 160°F as required. Machine was only reaching 155-156°F. Must discontinue use of dish machine until issue is resolved. Must use 3-compartment sink to sanitize dishes in interim.
15B - warewashing facilities: installed, maintained, used; test strips

Observed wrong temperature stickers for high temp dish machine. The stickers onsite change color when final rinse temperature reaches 180F, however, must have stickers that indicate 160F has been reached. This was noted on previous inspection. Health Authority recommends switching to use of maximum registering thermometer for instead of temperature stickers.
