6-1A - proper cold holding temperatures
Regulation: 511-6-1.04(6)(f) - time/temperature control for safety; cold holding (p)
Observed time/temperature control for safety (TCS) foods in prep top/reach-in unit being cold held above 41°F. Temperatures of TCS foods ranged between 46-49°F. TCS foods must be cold held at 41° or below. COS by discarding.
NOTE: this is the same unit that had issues on last inspection. Must service unit.
12C - wiping cloths: properly used and stored
Regulation: 511-6-1.04(4)(m) - wiping cloths, use limitation (c)
Observed all sanitizer buckets at 0 ppm due to chemicals being low in container. Quat sanitizer must be 150-400 ppm or as specified on manufacturers instructions. COS by replacing sanitizer container; sanitizer then dispensed at 300 ppm.
