6-1A - proper cold holding temperatures
Regulation: 511-6-1.04(6)(f) - time/temperature control for safety; cold holding (p)
Observed hot dogs being cold held at 51°F in reach-in cooler behind register. Ambient temperature of unit was 50.7°F. Time/temperature control for safety (TCS) foods must be cold held at 41 or below. COS by discarding. Do not store TCS foods in cooler until minimum cold holding temperature can be maintained.
4-2B - food-contact surfaces: cleaned & sanitized

Observed substantial black mold build-up along the interior portions of bulk ice machines (top portion of Coke machines). Bulk ice machine in back area behind bar also contained mold build-up. Ice machines must be emptied, cleaned, and sanitized within 72 hours. Must increase cleaning frequency at a rate that precludes mold accumulations. Use of ice was discontinued with plans to purchase bagged ice until ice machines can be cleaned.
Note: this is the 3rd consecutive violation for mold build-up in ice machines. Management must develop a cleaning schedule for all ice machines. Recommending monthly deep cleaning as mold grows in moist environments such as in ice machines.
17C - physical facilities installed, maintained, and clean
Regulation: 511-6-1.07(5)(a),(b) - good repair, physical facilities maintained; cleaning, frequency & restrictions, cleaned often enough to keep them clean (c)
Floors in back kitchen area are fairly dirty and sticky. The physical facilities shall be cleaned as often as necessary to keep them clean and by methods that prevent contamination of food products. Floors must be mopped at a frequency that precludes build-up.
