Observed bacon stored in cooling rack without protection from overhead contamination. Observed steaks in reach-in freezer stored uncovered and not in active use. CA: PIC placed covers or wraps on all food.

Observed employee working in food preparation area without proper hair restraint (hair net or cap). COS: PIC had employee put on hair net.

Observed chlorine ware wash machine not pulling proper concentration of sanitizer. Dish machine was not operating yet at time of walk-through. Operator asked to turn on machine to assess. COS: PIC called for machine to be serviced and instructed employees to utilize three-compartment sink until it is repaired.

CA: A warewashing machine and its auxiliary components shall be operated in accordance with the machine's data plate and other manufacturer's instructions.

Observed dishwasher not capable of producing a chemical residue on dishes. RCA: PIC shall place the unit out of order until repairs are made and verified by the Chatham County Health Department.

Observed front hand sink to leak from faucet when turned off. Observed walk-in freezer doors not capable to opening without catching the flooring. Observed heavy ice build-up around both doors of walk-in freezer. RCA: 511-6-1.05(6)(a) - Good Repair & Proper Adjustment (C) (6) Maintenance and Operation.

Observed build-up and food debris within equipment through out the kitchen. Observed build-up on gaskets and food debris on bottom of nugget freezer. Observed build-up on gaskets of vegetable reach-in cooler and reach-in cooler that holds bacon. Observed build-up under lip of iced coffee machine near dispensing spout.
