Observed small reach-in cooler under hot fudge storage not capable of maintaining 41F or less. All food product within ranged from 46F-52F. CA: All TCS products (cheese slices and whipped cream) were discarded. Cooler shall not be used to store TCS products until repaired.

Observed pulled pork, chili and sour cream stored in tall double-door reach-in cooler near back of building not holding safe temperatures of 41F or below. CA: Pulled pork, sour cream and chili were discarded. RCA: Ambient temperature of cooler is 35F. There are many flavoring bottles stored on top shelf of unit where fan is located. Reorganization of refrigerator should occur to all for air movement to cool TCS products.

Except as specified in paragraph 2 of this subsection, receptacles and waste handling units for refuse, recyclables, and returnables and for use with materials containing food residue shall be durable, cleanable, insect- and rodent-resistant, leakproof, and nonabsorbent.
Plastic bags and wet strength paper bags may be used to line receptacles for storage inside the food service establishment, or within closed outside receptacles.
