Observed all food within prep top cooler to be doubled panned due to separation bars missing in unit. CA: All food except the sliced cheese was able to be maintained at 41F or below. Cheese was placed into unit an hour prior to inspection and was able to be placed on ice and transferred to metal containers. Unit shall be outfitted to allow individual containers to sit directly into the unit without being double panned to allow for adequate air flow to food containers.
