Observed lemons and oranges stored in walk-in unit with mold and in bad condition.
CA: PIC discarded both boxes of lemons and oranges. Food shall be safe, unadulterated, and honestly presented.
6-1A - proper cold holding temperatures
Regulation: 511-6-1.04(6)(f) - time/temperature control for safety; cold holding (p)
Observed TCS foods (watermelon and tomatoes) in reach-in unit holding above 41F. Ambient temperature holding at 52F.
CA: PIC placed food items on ice bath, food still within SAFE zone. Advised PIC to have reach in unit serviced. Time/temperature control for safety food shall be maintained at 41°F (5°C) or below.
