12A - contamination prevented during food preparation, storage, display
Regulation: 511-6-1.04(4)(u) - food display (p)
Observed display of pastries in front food service area to not have protection from overhead contamination.
RCA: PIC shall cover displayed food from overhead protection using plastic wrap, glass coverings, or by installing overhead protection. CA: Food on display shall be protected from contamination by the use of packaging; counter, service line, or salad bar food guards, display cases, or other effective means. All food, whether on display, being prepared for service or placed for consumer self-service must be protected from contamination.
15A - food and nonfood-contact surfaces cleanable, properly designed, constructed, and used
Regulation: 511-6-1.05(6)(q)1&3 - good repair & calibration (c)
Observed walk-in cooler condenser to have a leak.
RCA: PIC shall have equipment repaired as to ensure safe temperature zone and avoid any possible contamination. All equipment shall remain in good repair.
15C - nonfood-contact surfaces clean
Regulation: 511-6-1.05(7)(a)2,3 - equipment, food/nonfood-contact surfaces, and utensils, food-contact surfaces of cooking equipment & nonfood-contact surfaces free of accumulations (c)
Observed a heavy build-up of frost/ice on the inner walls and bottom surface of front service salad prep top. Observed black build-up in well of steam well. COS: PIC removed food in cooler and cleaned the build-up of ice on walls and bottom surface of prep top. PIC raised temperature of prep top as to prevent any accumulation of food-items. PIC removed steam well container and washed, rinsed and sanitized before replacing. CA: Nonfood-contact surfaces of equipment shall be kept free of an accumulation of dust, dirt, food residue, and other debris.
