Observed hamburgers hot holding in the warmer below 135 F. (COS- PIC reheated burgers and is currently hot holding at 134 F.) RCA: Ensure all TCS food items are hot-holding at 135 F or above at all times.

Observed dish machine unable to reach the dish temperature of 160 F. Advised PIC to ensure the dish machine maintains a final rinse temperature of 180 F and ensure the dish temperature reaches 160 F.
