Observed hot dogs hot-holding on roller at 107F. PIC stated the hot dogs were heated on roller and then placed into hot-holding less than 30 minutes prior. COS: PIC placed hot dogs on heating setting to reach 135F before placing back into hot-holding.

Observed hot dogs in the front food service reach in cooler to have a temperature above 41F. The ambient temperature in the reach in cooler was also above 41F. CA: PIC discarded all hot dogs in the cooler and will use the refrigerator in the back kitchen area until the front reach in is repaired.
2/17 Follow-up: Reach-in cooler was verified to be functioning at 39F.

Observed black mold like build up on the baffle of the ice machine and slimy pink mold like build up in the nozzles of all four drink machines. RCA: Equipment, food-contact surfaces, and utensils shall be clean to sight and touch. Equipment shall be cleaned at a frequency to prevent the build up or accumulation of matter or debris.
