Observed food built-up inside of the reach in coolers. Food stuck on the gaskets and at the bottom of the cooler.

RCA: Told PIC to increase the cleaning frequency. Nonfood-contact surfaces of equipment shall be kept free of an accumulation of dust, dirt, food residue, and other debris.

Observed bacon in reach in cooler to be hanging from the box touching the inside of the wall of reach in cooler.

RCA: Had PIC throw out the bacon that was touching the wall. Told PIC to ensure that bacon is properly covered so that it is not becoming contaminated.

Observed food built-up inside the reach in coolers.

RCA: PIC started cleaning the built-up of the food that was inside of the reach in. Told PIC to increase the cleaning frequency. Nonfood-contact surfaces of equipment shall be kept free of an accumulation of dust, dirt, food residue, and other debris.

Observed bacon in reach in cooler uncovered touching the metal bar of shelf.

RCA: Told PIC to ensure that they keep bacon covered so it isn't touching the metal shelf.

Observed slight built-up inside ice machine.

RCA: Told PIC to increase the cleaning frequency. Nonfood-contact surfaces of equipment shall be kept free of an accumulation of dust, dirt, food residue, and other debris.

Observed dairy products (creamer, milk) above 41F in reach in cooler by entrance of kitchen. Top section of cooler was in temp, bottom section was out of temp. Possibly due to non-factory shelf liners added to cooler. COS: PIC discarded food items and will remove shelf liners.

Observed multiple items (bacon, sausage patty, other various meats) uncovered in middle reach in cooler next to grill. Bacon had been removed from box and was spilling out onto shelf. Fan above meat was covered in dust. CA: Implement system to keep all foods covered when not in immediate use.

Observed uncovered waffle batter in low reach in cooler that had condensation from ceiling dropping into food. COS: PIC discarded food items and will keep batter covered when not in use.

Observed buildup on water spigot. COS: PIC cleaned spigot

Observed handles of scoops touching food on prep top (Hashbrowns, cubed ham). CA: Ensure all scoop handles remain above food product.

Observed knives being stored in the crevice of the prep top cooler lid between use. CA: In use utensils must be stored in a clean location.

Observed clean pots put away wet in drawers below grill CA: Clean utensils must be allowed to fully airdry prior to storage

Observed a personal McDonalds cup and a personal cup, both with lids and straws being stored next to clean utensils and above bread.

COS/CA: PIC removed drinks and placed in a designated location. Employees shall consume food only in approved designated areas separate from food preparation and serving areas, equipment or utensil areas and food storage areas.

Observed a mold like and pink slime like build up on the inside of the ice bin.

COS/CA: PIC cleaned spot with buildup and will have the ice bin drained and properly sanitized. Equipment food-contact surfaces and utensils shall be clean to sight and touch.

Observed multiple items (beef, chicken) sored in the reach in coolers not covered to protect against contamination.

COS/CA: PIC covered food items. Food items are to be protected from contamination by being covered.
