6-1A - proper cold holding temperatures
Regulation: 511-6-1.04(6)(f) - time/temperature control for safety; cold holding (p)
Observed several TCS items stored on top of prep-top unit to exceed 41F (salsa, marinara sauce, sour cream, butter) (see temperature log). COS: PIC discarded of all TCS items as they were prepped and stored in the unit over 4 hours prior.
4-2A - food stored covered
Observed items in bottom of prep-top cooler stored uncovered (watermelon, blueberries). Observed onion rings stored in reach-in freezer to be uncovered. COS: PIC covered all items before placing back into units.
