Regulation: 511-6-1.04(6)(g) - ready-to-eat time/temperature control for safety food, date marking (pf)
Observed multiple TCS foods (steak, chicken, fish) to not be date marked in a reach in cooler. CA: PIC had an employee date mark foods with the prep date.
14B - utensils, equipment and linens: properly stored, dried, handled
Regulation: 511-6-1.05(10)(e)1,2,4 - equipment, utensil, linens, stored 6" off floor in clean, dry location (c)
Observed dishware to be stored on the top shelf of the prep area with no overhead protection and not inverted or covered with a "dummy plate". CA: PIC removed the dishware that was on top and wrapped them to create a protective barrier.
