6-2 - proper date marking and disposition
Regulation: 511-6-1.04(6)(h) - ready-to-eat time/temperature control for safety food, disposition (p)
Observed multiple foods past their datemarked use by date or with incorrect/old dates: queso sauce (19NOV25), sliced onions (21NOV25) discarded.
COS: CFSM discarded out of date foods and changed dates on others prepared that day. (One container said use by August 2028). Charlton EH instructed PIC to ensure proper date marking and to remove old date marking labels on bins.
14D - gloves used properly
Regulation: 511-6-1.04(4)(n)2,3,4 - gloves, use limitations, slash resistant gloves & cloth gloves (c)
Observed an employee wear gloves outside of the FSE and reenter the kitchen without discarding the gloves.
COS: Charlton EH stopped the employee and made them remove their gloves, wash their hands, and put on a new pair and went over proper glove use.
15A - food and nonfood-contact surfaces cleanable, properly designed, constructed, and used
Regulation: 511-6-1.05(2)(a) - equipment and utensils, constructed of durable materials (c)
Observed damage to the fryer baskets in the form of loose metal mesh and chipped rubber handles.
CA: Charlton EH instructed PIC that the baskets must be replaced with new ones.
15B - warewashing facilities: installed, maintained, used; test strips
Regulation: 511-6-1.05(6)(f) - warewashing sink, use limitations (c)
Observed a one-inch (1") lump of rust at the bottom of the sanitizer compartment of the 3-comp sink due to patching a leak. Repeat.
CA: Charlton EH instructed facility to replace the 3-comp sink or to have the rusted area spot welded with stainless steel to prevent rust.
