OBSERVED MECHANICAL DISHWASHER NOT REACHING THE MINIMUM TEMPERATURE REQUIREMENT OF 160F FOR SANITIZING. CA: MECHANICAL WAREWASHING EQUIPMENT SHALL REACH A MINIMUM TEMPERATURE OF 160F FOR SANITIZING. CB: PIC CALLED MAINTENANCE AND WILL USE 3-COMPARTMENT SINK UNTIL REPAIRED.
12C - wiping cloths: properly used and stored

OBSERVED WIPING CLOTHES STORED IN SANITIZER BUCKETS THAT DID NOT MEET CONCENTRATION REQUIREMENTS FOR SANITIZING. CA: WIPING CLOTHES IN-USE SHALL BE HELD BETWEEN USES IN PROPER CONCENTRATION FOR SANITZING. COS: PIC CHANGES ALL SANITIZER BUCKETS.

OBSERVED ACCUMULATION OF DUST DEBRIS ON WALK-IN COOLER FAN COVERS. CA: NON-FOOD CONTACT SURFACES OF EQUIPMENT SHALL BE KEPT FREE OF AN ACCUMULATION OF DUST, DIRT, FOOD RESIDUE, AND OTHER DEBRIS. CB: PIC WILL HAVE FAN COVERS CLEANED.

OBSERVED EMPLOYEE FOOD AND RINKS NOT STORED IN EMPLOYEE DESIGNATED LOCATION. CA: AREAS DESIGNATED FOR EMPLOYEES TO EAT AND DRINK SHALL BE LOCATED SO THAT FOOD AND EQUIPMENT ARE PROTECTED FROM CONTAMINATION. COS: PIC RELOCATED EMPLOYEE ITEMS TO AN APPROVED LOCATION.
