6-1A - proper cold holding temperatures
Regulation: 511-6-1.04(6)(f) - time/temperature control for safety; cold holding (p)
Observed improper cold holding of liquid eggs. Observed a closed carton (and an opened one) both placed on a prep try. Both temps were 64f. Carton notes to "Keep Refrigerated". Product should never be held in such a way that allows it to be above 41f (no time holding written procedures observed). COS discarded by manager.
4-2B - food-contact surfaces: cleaned & sanitized

Observed raw meat debris on grill drop pan. This typically happens at first run, beef patty does not cook completely and needs to be run through the grill again. ANY raw meat in the drop try must always be removed and try to be properly washed, rinsed, and sanitized. No actual contamination observed with grilled meats. COS manager took try to wash sink and properly washed, rinsed and sanitized.
