Observed an outside garbage dumpster full of trash with no lid on one half of it. CA:Receptacles and waste handling units for refuse, recyclables, and returnables used with materials containing food residue and used outside the food service establishment shall be designed and constructed to have tight-fitting lids, doors, or covers. Correct by next inspection. City needs to be contacted to replace the dumpster.

Surfaces of the lights in the walk in cooler covered in dust and mold-like substance. CA: Non-food contact surfaces shall be cleaned at a frequency to prevent accumulations. COS: Employee came and wiped down lights in walk in during the inspection.

Observed hamburgers in the warmer for teachers reading out of teamperature at 90 degrees F. CA: Except during preparation, cooking, or cooling, or when time is used as the public health control, time/temperature control for safety food shall be maintained at 41°F (5°C) or below if cold holding or 135°F (57°C) or above if hot holding. COS: Burgers tossed and replaced with freshly cooked ones. Food for teachers being kept in a properly functioning warmer till the one they were using can be repaired.

Observed salads in both reach in coolers for front food service out of temperature and read above 50 degrees F. TCS food being cold held shall be maintained at 41 degrees F or below. COS: Food prepared that morning has been out for less than an hour, food placed back in Walk-in cooler to properly cool down.
Observed pizza and vegetables in warmer cabinet were out of temperature at 115 and 108 degrees F respectively. TCS food being hot held shall be maintained at 135 degrees F or above. COS: Food reheated to over 165 degrees F before placed back in warmer.

Observed back of the chute in the ice machine has excessive buildup of mold/slime/dust. Food contact surfaces must be cleaned at a frequency necessary to reduce buildup of residues. COS: Out of order sign place on machine, will be cleaned as soon as the rush is done.

Observed no temperature measuring devices located in the front food service cooler/hot hold units. Refrigerators, coolers, and hot holding units must have a physical temperature measuring device placed in the warmest part of the unit to accurately gauge conditions of the equipment.

At time of inspection the hand sink in the back of the kitchen observed with no hot water. A hand sink shall be equipped to provide tempered water at a temperature of 100 degrees F. COS: Work order placed, Do Not Use sign placed over sink and employees redirected to front hand sink.
