EHS observed moldy oranges in box on bottom shelf of prep table in main kitchen. Violation: Condition. Food shall be safe, unadulterated, and honestly presented. CA: Discarded moldy oranges.
1-2B - certified food protection manager
Regulation: 511-6-1.03(3)(b) - certification requirements/exemptions (pf)
EHS observed facility with expired CFSM certificate posted and no other certificates available. Violation: At least one employee that has supervisory and management responsibility and the authority to direct and control food preparation and service shall be a certified food safety manager who has shown proficiency of required information through passing a test that is part of an accredited program that conforms to the national standards for organizations that certify individuals. Certified Food Safety Managers must be designated to one food service establishment only and maintain and renew certification in accordance with the requirements of the examination taken. CA: Obtain by 03/28/26.

EHS observed facility without most recent inspection report posted. Violation: The most current inspection report shall be prominently displayed in public view at all times, within fifteen feet of the front or primary public door and between five feet and seven feet from the floor and in an area where it can be read at a distance of one foot away. CA: Print and post inspection report from today 01/28/26.
14C - single-use/single-service articles: properly stored, used
Regulation: 511-6-1.05(10)(g)(1)&(3) - kitchenware and tableware, single-service/-use items properly handled to protect food-/lip-contact surfaces (c)
EHS observed single use utensils with food contact surface stored upward. Violation: Single-service and single-use articles and cleaned and sanitized utensils shall be handled, displayed, and dispensed so that contamination of food-and lip-contact surfaces is prevented. CA: EHS instructed PIC to flip items to protect the food contact surfaces.
15B - warewashing facilities: installed, maintained, used; test strips
Regulation: 511-6-1.05(3)(h),(i),(j) - temperature measuring device, manual warewashing; sanitizing solutions, testing device (pf)
EHS observed facility without test strips for sanitizer. Violation: A test kit or other device that accurately measures the concentration in mg/L of sanitizing solutions shall be provided. CA: EHS instructed PIC to obtain test strips for sanitizer used.
